Strawberry and Nectarine Salad Recipe

  • 1 cup walnut halves, chopped
  • 8 cups salad mix
  • 1 1/2 cups nectarines, cut into 1/2-inch slices
  • 1 1/2 cups strawberries, cut into 1/2-inch slices
  • 4 ounces goat cheese, crumbled
  • 3 tablespoons balsamic vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon pepper
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh mint leaves, finely chopped
  1. Preheat oven to 350 degrees F. Place walnut pieces in a shallow ovenproof pan. Place pan in oven and toast walnuts until lightly browned, about 8 minutes. Set aside to cool.
  2. In a serving bowl, combine salad mix, nectarines, strawberries, goat cheese, and toasted walnuts.
  3. In a separate bowl, combine vinegar, salt, sugar, and pepper. Whisk to dissolve seasonings. Slowly add olive oil in a steady stream while continuing to whisk. Add the chopped mint and stir. Add dressing to salad and toss. Serve immediately.
