Stilton and port soufflé Recipe

  • 150g/5oz Stilton cheese, crumbled
  • 150ml/5fl oz double cream
  • 2 tbsp port
  • 4 free-range egg whites
  1. Preheat the oven to 200C/400F/Gas 6.
  2. Place the Stilton, cream and port into a small non-stick frying pan over a medium heat and cook for 2-3 minutes, or until the Stilton has melted.
  3. Whisk the egg whites until stiff peaks form when the whisk is removed. Fold the Stilton mixture into the egg whites.
  4. Place this mixture into an ovenproof dish and transfer to the oven to bake for eight minutes, or until risen and golden.
