- 150g/5oz Stilton cheese, crumbled
- 150ml/5fl oz double cream
- 2 tbsp port
- 4 free-range egg whites
- Preheat the oven to 200C/400F/Gas 6.
- Place the Stilton, cream and port into a small non-stick frying pan over a medium heat and cook for 2-3 minutes, or until the Stilton has melted.
- Whisk the egg whites until stiff peaks form when the whisk is removed. Fold the Stilton mixture into the egg whites.
- Place this mixture into an ovenproof dish and transfer to the oven to bake for eight minutes, or until risen and golden.
