Spinach Salad with Mandarin Orange Dressing Recipe

  • 1 (11 ounce) can mandarin orange slices, drained
  • 1/4 cup Safeway SELECT Verdi Extra-Virgin Olive Oil
  • 1 tablespoon sugar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt, or to taste
  • 2 tablespoons Safeway SELECT Red Wine Vinegar
  • 2 dashes hot pepper sauce, such as Tabasco
  • 10 ounces washed and trimmed spinach leaves (baby leaves preferred)
  • 1/4 cup slivered almonds, toasted
  • 1/2 red onion, thinly sliced
  1. To make dressing: In a blender or a food processor with a metal blade, puree 8 orange slices (reserve the remainder for the salad). Add olive oil, sugar, salt, vinegar, and hot pepper sauce. Process until pureed. Makes 1/2 cup.
  2. To make salad: In a medium-size bowl, toss spinach, almonds, remaining oranges, and onion slices with dressing. Serve immediately.
