- 6 cups fresh spinach
- 1 navel orange, peeled, sectioned and cut into bite size pieces
- 1 red onion, halved and thinly sliced
- 2 tablespoons chopped fresh parsley
- 1 tablespoon orange juice
- 1 tablespoon olive oil
- 1 tablespoon honey
- 2 teaspoons rice wine vinegar or white wine vinegar
- 1 pinch ground ginger
- Combine spinach, oranges, and onions. Whisk parsley, juice, oil, honey, vinegar, and ginger until blended. Pour over salad. Toss well.
