- 1/4 cup toasted walnuts (see Tip)
- 2 slices crustless white bread
- 1 clove garlic
- 1/2 cup cooked spinach
- 1/2 cup nonfat plain yogurt
- 1/2 cup freshly grated Parmesan cheese
- 1 tablespoon extra-virgin olive oil
- Salt and freshly ground pepper to taste
- Place walnuts, bread and garlic in a food processor or blender; blend until smooth. Blend in spinach, yogurt, Parmesan and oil. Season with salt and pepper.
