Spinach, orange and pine nut salad Recipe

  • 200g/7oz spinach leaves
  • 2 oranges, peeled and segmented
  • 100g/3½oz pine nuts, toasted in a frying pan until golden
  • 1 tomato, sliced
  • 2 tbsp olive oil
  1. Mix all of the ingredients together in a bowl and serve.
