Spinach and Tomato Pita Filling Recipe

  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 cup cottage cheese
  • 1 (8 ounce) package shredded Cheddar cheese
  • 3 eggs, beaten
  • 2 Roma (plum) tomatoes, or more to taste, chopped
  • 3 tablespoons flour
  • 2 tablespoons melted butter
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Stir spinach, cottage cheese, Cheddar cheese, eggs, tomatoes, flour, and butter together in a bowl; spread into an 8-inch baking dish.
  3. Bake in the preheated oven until slightly set, about 20 minutes.
