- 100g/3½oz spinach
- ¼ onion, sliced thinly
- ¼ red pepper, thinly sliced
- 1 tbsp fresh dill, chopped
- 3 tbsp olive oil
- 1 tbsp white wine vinegar
- 1 tsp wholegrain mustard
- salt and freshly ground black pepper, to taste
- For the salad, mix together the salad ingredients in a bowl and set aside.
- To make the dressing whisk together the ingredients. Drizzle the dressing over the salad and serve.
