Spinach and lentil cakes Recipe

  • 150g/5Âźoz spinach, chopped
  • 85g/3oz Puy lentils, cooked
  • 1 tsp curry powder
  • 1 free-range egg
  • 2 tbsp plain flour
  • pinch chilli flakes
  • 1 tbsp oil
  • Greek-style yoghurt
  1. Mix the spinach, lentils, curry powder, egg, flour and chilli flakes together in a bowl. Form the mixture into two patties
  2. Heat the oil in a frying pan and fry the patties for 2-3 minutes on each side until crisp and golden.
  3. Serve with Greek-style yoghurt.
