Spiked Tropical Ice Pops Recipe

  • 2 cups coconut milk
  • 1 cup pineapple juice
  • 1 cup heavy whipping cream
  • 1/2 cup white sugar
  • 1/8 teaspoon kosher salt
  • 4 fluid ounces rum
  • 4 fluid ounces triple sec
  • 1 drop food coloring, or as needed (optional)
  1. Combine coconut milk, pineapple juice, cream, sugar, salt, rum, triple sec, and food coloring in a blender; blend until smooth. Pour into zip-top ice pop pouches. Place in the freezer; freeze until firm.
