- 2 pounds pork sirloin chops
- 1 tablespoon canola oil
- 2 teaspoons ground coriander
- 1 teaspoon ground turmeric
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/8 teaspoon dry mustard
- 1 dash cayenne pepper
- Raita
- 1 cucumber
- 8 ounces plain yogurt
- 3 tablespoons chopped fresh cilantro
- 1/4 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- Rub the chops with canola oil. Mix together the coriander, turmeric, salt, pepper, cayenne and dry mustard and rub this seasoning mixture evenly over chops. Cover and refrigerate overnight.
- For the Raita: Peel the cucumber and remove the ends. Grate the cucumber and mix together with the yogurt, cilantro, cumin, and coriander. Refrigerate overnight.
- The pork chops can be grilled or broiled. Cook for 5 minutes per side per inch thickness.
