Spicy penne with olives, tomatoes and spicy sausage Recipe

  • 1 tbsp olive oil
  • 4 spicy sausages, chopped
  • ½ onion, finely sliced
  • pinch dried chilli flakes
  • 200g/7oz canned cherry tomatoes
  • large handful fresh basil, chopped
  • 5 mini mozzarella balls, drained
  • 2 tbsp mixed olives
  • 250g/9oz fresh penne, cooked according to packet instructions
  1. Heat the oil in a pan and fry the sausage and onion until golden-brown. Add the chilli flakes.
  2. Add the cherry tomatoes, basil, mozzarella and olives and stir over a low heat for 2-3 minutes.
  3. Add the cooked pasta to the sauce and stir well. Divide between two bowls and serve.
