- 1 tbsp olive oil
- 4 spicy sausages, chopped
- ½ onion, finely sliced
- pinch dried chilli flakes
- 200g/7oz canned cherry tomatoes
- large handful fresh basil, chopped
- 5 mini mozzarella balls, drained
- 2 tbsp mixed olives
- 250g/9oz fresh penne, cooked according to packet instructions
- Heat the oil in a pan and fry the sausage and onion until golden-brown. Add the chilli flakes.
- Add the cherry tomatoes, basil, mozzarella and olives and stir over a low heat for 2-3 minutes.
- Add the cooked pasta to the sauce and stir well. Divide between two bowls and serve.
