- 4 tablespoons oil
- 1 pound beef chuck stew meat
- 1 chopped onion
- 2 tablespoons Archer Farms™ taco seasoning
- 1 (8 ounce) package fresh sliced mushrooms
- 8 (6 inch) tortillas
- 1 1/2 cups shredded Pepper Jack cheese
- Heat 2 tablespoons of the oil in large skillet over medium-high heat. Add beef and onion; cook and stir 4 minutes or until beef is thoroughly cooked. Add mushrooms, taco and seasoning; cook and stir an additional 3 minutes or until mushrooms are tender.
- Using a slotted spoon, top each tortilla with beef mixture. Sprinkle with cheese. Roll up tightly to make flautas; secure with toothpick.
- Wipe same skillet clean with paper towel. Add remaining 2 tablespoons oil; heat over medium heat until hot. Add flautas; cook 4 to 5 minutes or until filling is ho and tortillas are golden brown, turning occasionally.
- Remove toothpicks before serving. Spoon on some sour cream and salsa, if you like.
