Spicy beans on toast with tomato and basil garnish Recipe

  • 2 tbsp olive oil
  • ¼ onion, finely chopped
  • pinch chilli flakes
  • 2 rashers vegetarian bacon, chopped
  • 2 tomatoes, seeds removed and chopped
  • ½ tinned baked beans, sieved
  • 1 slice white toast
  • ½ tomato, sliced
  • 25g/1oz grated cheddar
  • 5 fresh basil leaves, torn
  1. Heat the oil in a frying pan and gently fry the onion and chilli flakes for 1-2 minutes, or until softened, then add the vegetarian bacon. Fry for 3-4 minutes, or until golden-brown and crisp.
  2. Add the tomatoes and baked beans and cook for 2-3 minutes to warm through.
  3. Serve the beans and bacon on a slice of toast, with slices of tomato and cheddar on top, garnished with fresh basil.
