- 1 tbsp olive oil
- ½ red pepper, deseeded, chopped
- 3 garlic cloves, crushed
- 1 tbsp honey
- 1 lamb steak
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp chilli flakes
- handful flatleaf parsley,
- handful basil leaves,
- handful chervil
- handful mint
- Heat the oil in a small frying pan and sautĂŠ the red pepper for 6-8 minutes or until soft.
- Add the garlic and fry for one minute. Stir in the honey then put the mixture into a blender or food processor and liquidise until smooth. Strain through a sieve and cool.
- For the lamb, drizzle the lamb steak with oil and sprinkle over the paprika and chilli flakes.
- Heat a griddle pan until hot, then fry the steak for 4-5 minutes on each side or until cooked as desired. Rest for five minutes.
- Arrange the herbs on a plate and drizzle the dressing around the edge. Serve with the lamb steak.
