- 1/3 cup medium-grind bulgur
- 1/3 pound ground lamb
- 1/3 pound ground 95% lean beef
- 1/2 medium onion, grated
- 4 cloves garlic, minced
- 1/4 cup finely chopped mint
- 1 1/2 teaspoons red curry paste
- 3/4 teaspoon ground cumin
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground coriander
- 1/2 medium cucumber, grated and spun dry in salad spinner
- 1/3 cup low-fat plain Greek-style yogurt
- 1/4 teaspoon freshly ground black pepper
- 12 large lettuce leaves
- 1 medium tomato, chopped
- Soak bulgur in 1/3 cup hot water 1 hour.
- Combine bulgur, lamb, beef, onion, garlic, mint, curry paste, cumin, allspice, and coriander. Chill, covered, 30 minutes.
- Mix cucumber, yogurt, and pepper in small bowl. Season with salt.
- Preheat grill to medium-high. Shape meat mixture into 12 balls and flatten into thick miniburgers. Season with salt.
- Grill patties 4 to 8 minutes, turning once, until thermometer inserted registers 160 degrees F. Wrap each patty in a lettuce leaf and serve with yogurt sauce and tomato.
