- 4 medium Braeburn apples, peeled and chopped
- 1 medium mango, peeled and cubed
- 1/3 cup red bell pepper, chopped
- 1 cup onion, chopped
- 1 cup golden raisins
- 1/2 cup candied pineapple OR dried fruit
- 1 medium fresh lime, zest and juice
- 1 cup orange juice
- 1 1/4 cups cider vinegar
- 2 cups white sugar
- 1/2 cup brown sugar
- 2 teaspoons mustard seed
- 2 teaspoons Spice Islands® Saigon Cinnamon
- 2 teaspoons Spice Islands® Crystallized Ginger
- 1 teaspoon Spice Islands® Ground Ginger
- 1 teaspoon dehydrated minced garlic
- 1 teaspoon Spice Islands® Coriander Seed
- 1 teaspoon Spice Islands® Dried Crushed Red Pepper
- 3/4 teaspoon salt
- 1/2 teaspoon Spice Islands® Ground Turmeric
- Combine all ingredients in a heavy large saucepan or Dutch oven. Bring to a boil over medium-high heat. Reduce heat and simmer, uncovered for 1-1/2 to 2 hours, until fruit becomes transparent and mixture is thickened. Stir occasionally. Transfer, in batches, to food processor or blender and pulse to desired consistency.
