Special Scalloped Corn Recipe

  • 1 (14.75 ounce) can cream-style corn
  • 2 eggs
  • 1/2 cup crushed saltines
  • 1/4 cup butter or margarine, melted
  • 1/4 cup evaporated milk
  • 1/4 cup shredded carrot
  • 1/4 cup chopped green pepper
  • 1 tablespoon chopped celery
  • 1 teaspoon chopped onion
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 cup shredded Cheddar cheese
  1. In a bowl, combine the first 11 ingredients; mix well. Transfer to a greased 1-qt. baking dish. Sprinkle with cheese. Bake, uncovered, at 350 degrees F for 30-35 minutes or until a knife inserted near the center comes out clean.
