- 1 (14.75 ounce) can cream-style corn
- 2 eggs
- 1/2 cup crushed saltines
- 1/4 cup butter or margarine, melted
- 1/4 cup evaporated milk
- 1/4 cup shredded carrot
- 1/4 cup chopped green pepper
- 1 tablespoon chopped celery
- 1 teaspoon chopped onion
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 cup shredded Cheddar cheese
- In a bowl, combine the first 11 ingredients; mix well. Transfer to a greased 1-qt. baking dish. Sprinkle with cheese. Bake, uncovered, at 350 degrees F for 30-35 minutes or until a knife inserted near the center comes out clean.
