- 250g/8žoz spaghetti
- 1 onion, finely chopped
- 50g/2oz butter
- 3 tbsp olive oil
- 6 cherry tomatoes, chopped
- handful fresh parsley, chopped
- salt and freshly ground black pepper
- Boil the spaghetti according to the packet instructions in plenty of boiling salted water.
- Drain the spaghetti and reserve about a tablespoon of the cooking water.
- Meanwhile, gently sautĂŠ the onion in the butter until softened.
- Add the tomatoes and the olive oil and cook briefly.
- Mix together the tomato sauce and the reserved pasta water.
- Add the parsley and seasoning. Add sauce to the spaghetti and mix thoroughly.
- Serve hot.
