- ½ cup soy sauce
- ¼ cup Jinjiang (black rice) vinegar or rice vinegar
- 2 tablespoons fine ginger shreds (see Note)
- Combine all the ingredients in a bowl and stir. To serve, divide among two or more small condiment bowls and put out a small spoon for each, so guests can dip their dumplings into the sauce or else drizzle it on, to taste.
