Southwest Summer Pork Chops Recipe

  • 4 teaspoons dried minced onion
  • 2 teaspoons ground cumin
  • 1 teaspoon cornstarch
  • 1 teaspoon chili powder
  • 1 teaspoon dried minced garlic
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 6 (3/4 inch) thick bone-in pork chops
  • 1/4 cup barbecue sauce
  • 2 tablespoons lemon juice
  1. In a small bowl, combine the first eight ingredients; rub over pork chops. Place pork chops in a large resealable plastic bag. In a bowl, combine barbecue sauce and lemon juice. Pour over pork chops. Gently rub bag to distribute sauce. Refrigerate 1-2 hours.
  2. If grilling the pork chops, coat grill rack with nonstick cooking spray before starting the grill. Grill chops, covered, over medium heat or broil 6 in. from the heat for 6-8 minutes on each side or until a meat thermometer reads 145 degrees F (63 degrees C).
