South Seas Salsa Recipe

  • 4 tomatoes, seeded and diced
  • 2 medium cucumbers, peeled and diced
  • 1 cup chopped scallions
  • 1/3 cup chopped fresh basil
  • 1/3 cup chopped fresh mint
  • 1/3 cup chopped fresh cilantro
  • 1 jalapeno, seeded and minced
  • 3 cloves garlic, minced
  • 3 tablespoons lime juice
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • 1 teaspoon peanut oil
  • 1 1/2 teaspoons Chinese chili sauce
  1. In a large bowl, toss the tomatoes, cucumbers, scallions, basil, mint, cilantro, jalapenos, and garlic.
  2. Drizzle the tomato mixture with the lime juice, soy sauce, honey, oil, and chili sauce. Mix thoroughly.
