South Seas Salsa Recipe
- 4 tomatoes, seeded and diced
- 2 medium cucumbers, peeled and diced
- 1 cup chopped scallions
- 1/3 cup chopped fresh basil
- 1/3 cup chopped fresh mint
- 1/3 cup chopped fresh cilantro
- 1 jalapeno, seeded and minced
- 3 cloves garlic, minced
- 3 tablespoons lime juice
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon honey
- 1 teaspoon peanut oil
- 1 1/2 teaspoons Chinese chili sauce
- In a large bowl, toss the tomatoes, cucumbers, scallions, basil, mint, cilantro, jalapenos, and garlic.
- Drizzle the tomato mixture with the lime juice, soy sauce, honey, oil, and chili sauce. Mix thoroughly.
