Soba Noodle Salad Recipe

  • 1/2 pound dried soba noodles or dried capellini
  • Dressing
  • 1 teaspoon Asian (toasted) sesame oil
  • 2 tablespoons oyster sauce
  • 2 tablespoons Safeway SELECT Gourmet Club Soy Sauce
  • 2 tablespoons lemon juice
  • Salad
  • 1 1/2 cups chopped red or green bell peppers
  • 1/2 cup thinly sliced celery
  • 1/2 cup thinly sliced green onions
  • 1/2 cup roasted salted cashews
  1. In a 5- to 6-quart pan, bring about 3 quarts water to a boil over high heat. Add noodles and cook, uncovered, just until barely tender to bite, about 5 minutes for soba, 2 to 3 minutes for capellini.
  2. Meanwhile, make dressing by mixing together sesame oil, oyster sauce, soy sauce, and lemon juice.
  3. Drain noodles and rinse with cold water until cool; drain. In a serving bowl, mix noodles, bell peppers, celery, onions, and dressing; sprinkle with cashews.
