Snap Salad Recipe

  • 2 medium cucumbers, halved and thinly sliced
  • 2 medium carrots, julienned
  • 1/4 cup diced onion
  • 2 tablespoons raisins
  • 3/4 cup water
  • 1/4 cup vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  1. In a large bowl, combine cucumbers, carrots, onion and raisins. Combine remaining ingredients; pour over the cucumber mixture. Cover and refrigerate for at least 6 hours. Serve with a slotted spoon.
