- 2 large ripe avocados
 - ½ medium onion, finely chopped
 - 1 chipotle pepper in adobo sauce, finely chopped
 - 2 tablespoons fresh lime juice
 - ½ cup chopped fresh cilantro leaves
 - Kosher salt
 
- Peel and pit the avocados, and place them in a medium bowl. Add the onion, chipotle pepper, lime juice, and cilantro, and mash together with a fork until combined but still chunky. Season to taste with salt.
