Smoked, Grilled Squash Topped with Tomato Parmesan Recipe

  • 2 zucchini or yellow squash, sliced lengthwise into about four 1/4-inch slices
  • 2 small plum tomatoes, diced
  • 2 tablespoons freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1/4 cup minced red onion
  • 1 tablespoon fresh, minced basil
  • 1 tablespoon fresh, minced chives
  • 1/2 teaspoon salt
  • 1/4 to 1 teaspoon ground red pepper, optional
  1. Heat grill or grill pan over medium-high heat; grill squash until grill marks form, about 1 minute per side.
  2. Combine the tomatoes, cheese, oil, onion, basil, chives, salt and ground red pepper in a small bowl; spoon mixture onto grilled squash.
  3. Place squash on a rack in a stove-top smoker; smoke over low heat until squash is just tender, about 10 minutes.
