- 1 cup finely chopped, peeled, cored fresh pineapple
- 1/4 cup finely chopped red or green onion
- 1/3 cup apricot or pineapple preserves
- 1/4 cup chopped fresh cilantro
- 1 tablespoon fresh lime juice
- Smoked Gouda, sliced into 1-ounce pieces
- Butter Crisp Toasteds® Crackers
- Toss all ingredients in a small bowl to blend.
- Season with salt and pepper.
- Cover and refrigerate 1 hour or overnight for flavors to blend.
- Top Butter Crisp Toasteds(R) Crackers with a slice of Gouda, and a dollop of Pineapple Salsa.
