Smoked Gouda with Pineapple Salsa Recipe

  • 1 cup finely chopped, peeled, cored fresh pineapple
  • 1/4 cup finely chopped red or green onion
  • 1/3 cup apricot or pineapple preserves
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • Smoked Gouda, sliced into 1-ounce pieces
  • Butter Crisp Toasteds® Crackers
  1. Toss all ingredients in a small bowl to blend.
  2. Season with salt and pepper.
  3. Cover and refrigerate 1 hour or overnight for flavors to blend.
  4. Top Butter Crisp Toasteds(R) Crackers with a slice of Gouda, and a dollop of Pineapple Salsa.
