- 1 clove garlic
- 1 cup Amstel Light
- 1/2 pound Gouda, grated
- 1/2 pound smoked Gouda, grated
- 1 tablespoon lemon juice
- 1 1/2 teaspoons dry mustard powder
- 1 1/2 tablespoons cornstarch
- 1 tablespoon water, or as needed
- Cayenne pepper to taste
- Crush garlic clove in large saucepan.
- Add Amstel Light and slowly warm to simmer.
- Gradually add cheese and stir continuously.
- Smooth batter with lemon juice and mustard powder; add water if needed for texture.
- Mix cornstarch with 1 tablespoon water in small bowl. Gradually add cornstarch slurry to cheese mixture until desired thickness.
- Add cayenne to taste.
