- 2 cups lean pork loin
- 1/2 pound baby carrots
- 3 large potatoes, cut into chunks
- 2 parsnips, cut into chunks
- 2 onions, cut into chunks
- 3 cloves garlic, smashed
- 2 teaspoons ground black pepper
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 2 1/2 cups canned vegetable juice
- 2 tablespoons brown sugar
- 1 teaspoon mustard
- 4 teaspoons tapioca
- Place pork in a slow cooker. Add carrots, potatoes, parsnips, onions, garlic, pepper, thyme, and salt.
- In a medium bowl, combine vegetable juice, brown sugar, mustard, and tapioca. Pour over meat and vegetables.
- Cover and cook on low 6 hours or high 4 hours.
