Slow-Cooked Pork Stew Recipe

  • 2 cups lean pork loin
  • 1/2 pound baby carrots
  • 3 large potatoes, cut into chunks
  • 2 parsnips, cut into chunks
  • 2 onions, cut into chunks
  • 3 cloves garlic, smashed
  • 2 teaspoons ground black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 2 1/2 cups canned vegetable juice
  • 2 tablespoons brown sugar
  • 1 teaspoon mustard
  • 4 teaspoons tapioca
  1. Place pork in a slow cooker. Add carrots, potatoes, parsnips, onions, garlic, pepper, thyme, and salt.
  2. In a medium bowl, combine vegetable juice, brown sugar, mustard, and tapioca. Pour over meat and vegetables.
  3. Cover and cook on low 6 hours or high 4 hours.
