Skillet Potatoes Recipe
- 2 tablespoons Market Pantry™ butter
- 8 small red potatoes, thinly sliced
- 2 tablespoons fresh parsley, chopped
- 1 small red bell pepper, chopped
- 1 small onion, chopped
- 2 garlic cloves, sliced
- Melt butter in large skillet over medium heat. Add potatoes and toss with butter. Cover and cook 20 minutes or until tender.
- Mix in remaining ingredients. Cook an additional 20 minutes, stirring frequently, or until vegetables are tender and potatoes are browned.
- Season to taste with salt and pepper. Serve at once.
