Skillet Potatoes Recipe

  • 2 tablespoons Market Pantry™ butter
  • 8 small red potatoes, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 1 small red bell pepper, chopped
  • 1 small onion, chopped
  • 2 garlic cloves, sliced
  1. Melt butter in large skillet over medium heat. Add potatoes and toss with butter. Cover and cook 20 minutes or until tender.
  2. Mix in remaining ingredients. Cook an additional 20 minutes, stirring frequently, or until vegetables are tender and potatoes are browned.
  3. Season to taste with salt and pepper. Serve at once.
