Sizzling Stir-Fried Lemon Grass Steak Recipe

  • 2 stalks fresh lemon grass
  • 1/2 cup O Organics Chicken Broth
  • 3 tablespoons lemon juice
  • 2 tablespoons Safeway SELECT Seasoned Rice Vinegar
  • 2 cloves garlic, minced
  • 1 1/2 tablespoons sugar
  • 1 tablespoon grated lemon peel
  • 1 1/2 teaspoons Safeway SELECT Soy Sauce
  • 1/4 teaspoon hot chile flakes
  • 2/3 pound boneless New York strip steak, fat trimmed
  • 4 ounces rice sticks (mai fun, Asian rice noodles)
  • 1 tablespoon toasted sesame oil, divided
  • 1 cup thinly sliced onion
  • 1 cup thinly slivered red bell pepper
  • 10 large butter lettuce leaves, rinsed and crisped
  • Finely chopped roasted, salted peanuts (optional)
  1. Peel and discard tough outer layers of lemon grass; rinse. Trim off and discard tops and discolored parts of root ends. Thinly slice lemon grass stalks (you should have about 1/2 cup).
  2. In a blender, combine lemon grass and broth. Whirl until lemon grass is finely chopped. Pour mixture into a small pan and boil over high heat for 1 minute. Strain into a small bowl; discard lemon grass. To strained broth, add lemon juice, vinegar, garlic, sugar, lemon peel, soy sauce, and chile flakes.
  3. Cut steak in half lengthwise, then crosswise into very thin slices. Place meat in a bowl; add 4 tablespoons of broth mixture to coat well. Cover and chill 2 hours or up to 8 hours.
  4. Meanwhile, in a 4- to 5-quart pan, cook rice sticks in boiling water until tender to bite, about 3 minutes. Drain noodles well, squeezing out as much water as possible. Using scissors, cut noodles to make smaller pieces. Transfer noodles to a small bowl; add remaining broth mixture; mix well. Use or chill up to 8 hours.
  5. Just before serving, pour 1 teaspoon of sesame oil in a 10- to 12-inch nonstick frying pan over high heat. When pan is very hot, add onion and bell pepper. Stir-fry until barely tender, about 2 minutes. Transfer to a small serving bowl and set aside.
  6. Drain meat well and pat dry. Add another teaspoon. of oil to pan and return to high heat. When pan is hot, add half the meat. Stir-fry until browned, about 1 minute; transfer to a serving bowl. Add remaining oil and meat to pan; stir-fry until browned. Transfer to bowl with first batch.
  7. Set out vegetables, meat, dressed noodles, lettuce, and peanuts. To eat, fill lettuce leaf with items as desired and roll up.
