- Salad:
- 1 (20 ounce) package Simply Potatoes® Diced Potatoes with Onion
- 1/4 cup water
- 1 (15.25 ounce) can whole kernel corn, drained
- 1/2 cup sliced celery
- 1/2 cup shredded carrot
- 1 medium red bell pepper, chopped
- 1 (2.25 ounce) can sliced black olives
- 1 cup grape or cherry tomatoes
- Dressing:
- 1/3 cup olive oil
- 1/4 cup apple cider vinegar
- 1 (1.25 ounce) package taco seasoning mix
- Combine Simply Potatoes(R) and water in 4-quart microwave safe casserole dish. Cover; microwave on HIGH 10 to 12 minutes until potatoes are tender. Place Simply Potatoes(R) in extra large bowl. Add corn, celery, carrot, red pepper, olives and tomatoes.
- Meanwhile combine all dressing ingredients in small bowl. Whisk to combine. Pour over Simply Potatoes(R) mixture. Stir gently. Refrigerate 1 hour to blend flavors.
