Simply Potatoes® Meatloaf Recipe

  • 1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
  • 3 pounds lean ground beef
  • 1 1/2 cups chopped onions
  • 2 cups Italian seasoned bread crumbs
  • 1 tablespoon salt
  • 2 teaspoons ground black pepper
  • 1 1/2 cups ketchup
  • 4 eggs
  1. Heat oven to 375 degrees F. In large bowl combine all ingredients except 1/2 cup ketchup. Mix well, using hands if necessary. Divide mixture evenly into two 8×4- or 9×5-inch loaf pans. Spread 1/4 cup ketchup on top of each meatloaf.
  2. Bake 70 to 75 minutes or until center of meatloaf reaches 160 degrees F. Let stand 5 minutes before cutting.
