Shrimp Tabouli Recipe

  • 1 cup Archer Farms™ ancient tiny grains
  • 1 1/2 cups diced cucumber
  • 1/2 cup chopped fresh parsley
  • 1/3 cup chopped green onions
  • 1/3 cup chopped mint
  • 1/4 cup lemon juice
  • 1 teaspoon Market Pantry™ salt
  • 1/4 teaspoon Market Pantry™ black pepper
  • 1/3 cup Archer Farms™ extra virgin olive oil
  • 1 (16 ounce) package Market Pantry™ cooked shrimp, 71- to 90-ct., thawed according to package directions
  • Lettuce leaves
  1. Cook ancient grains according to package directions. Rinse under cold water; let drain.
  2. Meanwhile, combine cucumber, parsley, onions and mint in large bowl. Combine lemon juice, salt, pepper and olive oil in 1-cup glass measuring cup.
  3. Add grains to cucumber mixture; mix well. Pour lemon juice mixture over all; toss to coat. Stir in shrimp.
  4. Line platter with lettuce; spoon tabouli in center.
