Shrimp Kabobs Recipe

  • 18 medium shrimp or sea scallops
  • 1/2 medium medium red pepper, cut into 2-inch wedges
  • 1/2 medium zucchini, sliced
  • 1/2 medium medium yellow squash, sliced
  • 12 cherry tomatoes
  • 1 large onion, cut into cubes
  • 12 whole mushrooms
  • Marinade
  • 1/2 cup olive oil
  • 2 teaspoons Morton® Nature's Seasons® Seasoning Blend
  • 1/4 cup white wine vinegar
  • 1 tablespoon Dijon-style mustard
  • 1 teaspoon Morton® Garlic Salt
  1. Place vegetables and seafood pieces alternately on six 9-inch metal skewers. Set kabobs in glass baking dish. In medium bowl, combine marinade ingredients. Pour marinade over kabobs; cover. Marinate in refrigerator 30 minutes. Remove kabobs from marinade; reserve marinade. Place kabobs in shallow baking pan.
  2. Bake uncovered in 350 degrees F oven 8 minutes; baste with reserved marinade. Continue baking an additional 8 minutes or until done. Discard any remaining marinade. Serve seafood over lemon rice, if desired.
