Shrimp Kabobs Recipe
- 18 medium shrimp or sea scallops
- 1/2 medium medium red pepper, cut into 2-inch wedges
- 1/2 medium zucchini, sliced
- 1/2 medium medium yellow squash, sliced
- 12 cherry tomatoes
- 1 large onion, cut into cubes
- 12 whole mushrooms
- Marinade
- 1/2 cup olive oil
- 2 teaspoons Morton® Nature's Seasons® Seasoning Blend
- 1/4 cup white wine vinegar
- 1 tablespoon Dijon-style mustard
- 1 teaspoon Morton® Garlic Salt
- Place vegetables and seafood pieces alternately on six 9-inch metal skewers. Set kabobs in glass baking dish. In medium bowl, combine marinade ingredients. Pour marinade over kabobs; cover. Marinate in refrigerator 30 minutes. Remove kabobs from marinade; reserve marinade. Place kabobs in shallow baking pan.
- Bake uncovered in 350 degrees F oven 8 minutes; baste with reserved marinade. Continue baking an additional 8 minutes or until done. Discard any remaining marinade. Serve seafood over lemon rice, if desired.
