- 2 quarts water
- 2 (14.5 ounce) cans diced tomatoes, undrained
- 1 (10 ounce) package frozen chopped spinach
- 1 (10 ounce) package frozen BOCA Meatless Italian Sausage, cut into 1/2-inch slices
- 2 medium carrots, sliced
- 1 medium onion, chopped
- 1 cup bow tie pasta, uncooked
- Grated Parmesan cheese (optional)
- PLACE all ingredients except Parmesan cheese into stock pot or large Dutch oven.
- BRING to a boil on medium-high heat, stirring occasionally. Reduce heat to medium-low; simmer 15 minutes or until carrots are tender, stirring occasionally.
- SERVE sprinkled with Parmesan cheese, if desired.
