Shortcut Minestrone Soup Recipe

  • 2 quarts water
  • 2 (14.5 ounce) cans diced tomatoes, undrained
  • 1 (10 ounce) package frozen chopped spinach
  • 1 (10 ounce) package frozen BOCA Meatless Italian Sausage, cut into 1/2-inch slices
  • 2 medium carrots, sliced
  • 1 medium onion, chopped
  • 1 cup bow tie pasta, uncooked
  • Grated Parmesan cheese (optional)
  1. PLACE all ingredients except Parmesan cheese into stock pot or large Dutch oven.
  2. BRING to a boil on medium-high heat, stirring occasionally. Reduce heat to medium-low; simmer 15 minutes or until carrots are tender, stirring occasionally.
  3. SERVE sprinkled with Parmesan cheese, if desired.
