- 2 slices French bread, cut on the diagonal
- 2 raw tiger prawns, peeled and de-veined
- 1 spring onion, finely chopped
- ½ red chilli, finely chopped
- 1 tbsp chopped fresh coriander
- ½ tsp toasted sesame oil
- Heat a griddle pan until smoking. Add the slices of bread and grill on one side until golden.
- Place the remaining ingredients into a mini food processor and blend until smooth.
- Spread the un-toasted sides of the bread with the prawn mixture and then place prawn side down back onto the griddle pan to grill for three minutes or until cooked through.
