Seafood parcel Recipe
							
										
						
				
- 2 tbsp white wine
 
- 2 garlic cloves, peeled, chopped
 
- 2 shallots, peeled, chopped
 
- 1 tomato, chopped
 
- a few fresh basil leaves, torn
 
- 1 tbsp lemon juice
 
- 6-8 mussels, cleaned, debearded (discard any that do not close tightly when tapped)
 
- Preheat the oven to 200C/400F/Gas 6.
 
- Place two layers of tin foil in a frying pan over a high heat. Add the wine, garlic, shallots and tomato and heat until simmering.
 
- Add the basil, lemon juice and mussels and scrunch the foil closed over the top to form a parcel.
 
- Cook the parcel in the oven for 8-10 minutes. Open up the parcel and discard any mussels that haven't opened.
 
- Serve the foil parcel on a plate.
