Scallop Seviche with Daikon Recipe

  • 1 pound fresh scallops, cut into 1/3-inch rounds
  • 2 tablespoons grated Vidalia onion
  • 2 tablespoons diagonally sliced scallions (green part only)
  • 2 tablespoons julienned daikon radish
  • 1/4 cup rice wine vinegar
  • 1/4 cup soy sauce
  • 3 tablespoons lemon juice
  • 1/8 teaspoon finely chopped red chile
  1. Mix all ingredients except scallops and season with salt and pepper. Add scallops. Let sit 20 minutes before serving.
