- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 8 ounces sliced mushrooms
- 2 cups frozen mixed vegetables
- 6 ounces diced cooked chicken
- 2 (10.5 ounce) cans condensed cream of chicken soup
- 2 (14.5 ounce) cans chicken broth
- 3 cups Minute® White Rice, uncooked
- 1 (8 count) can large flaky biscuits
- Preheat oven to 375 degrees F.
- Heat oil in large saucepan over medium-high heat. Add onions and mushrooms; cook and stir 5 minutes.
- Mix in remaining ingredients except rice and biscuits; bring to a boil.
- Stir in rice. Pour into a 13×9-inch baking dish. Separate biscuits and place on top of filling. Bake 10-12 minutes, or until biscuits are golden brown.
