- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 1/2 pounds spinach, stemmed and tough center veins removed
- Salt and freshly ground white pepper
- In a large saucepan, heat butter over high heat. Add the garlic and spinach. Season with salt and pepper. Toss until the spinach has wilted but still bright green, about 5 minutes. Drain off any remaining liquid in the saucepan. Serve warm.
