Sautéed potatoes with parsley, garlic and lemon Recipe

  • 2 tbsp olive oil
  • 300g/10½oz new potatoes, cooked, quartered
  • 2 garlic cloves, finely chopped
  • 1 lemon, zest only
  • salt and freshly ground black pepper
  • handful fresh parsley, chopped
  • handful fresh basil, chopped
  • 1 lemon, halved
  1. Heat the olive oil in a frying pan over a medium heat, add the potatoes and fry for five minutes, stirring frequently.
  2. Add the garlic and gently fry for one minute. Add the lemon zest and cook for a further 2-3 minutes. Season well with salt and freshly ground black pepper, add the herbs and the juice of half the lemon and stir well.
  3. To serve, place the potatoes into a serving dish. Cut the remaining lemon half into wedges and use to garnish the potatoes.
