- 2 tbsp olive oil
- 300g/10½oz new potatoes, cooked, quartered
- 2 garlic cloves, finely chopped
- 1 lemon, zest only
- salt and freshly ground black pepper
- handful fresh parsley, chopped
- handful fresh basil, chopped
- 1 lemon, halved
- Heat the olive oil in a frying pan over a medium heat, add the potatoes and fry for five minutes, stirring frequently.
- Add the garlic and gently fry for one minute. Add the lemon zest and cook for a further 2-3 minutes. Season well with salt and freshly ground black pepper, add the herbs and the juice of half the lemon and stir well.
- To serve, place the potatoes into a serving dish. Cut the remaining lemon half into wedges and use to garnish the potatoes.
