Sausage and Spinach Soup Recipe

  • vegetable cooking spray
  • 1/2 pound sweet Italian pork sausage, cut into 3/4-inch pieces
  • 4 cups Swanson® Natural Goodness™ Chicken Broth
  • 1/2 teaspoon dried oregano leaves, crushed
  • 1 medium onion, chopped
  • 1 medium carrot, sliced
  • 2 cups coarsely chopped fresh spinach leaves
  1. Spray saucepot with cooking spray and heat over medium-high heat 1 minute. Add sausage and cook until browned, stirring often. Pour off fat.
  2. Add broth, oregano, onion and carrot. Heat to a boil. Cover and cook over low heat 10 minutes or until vegetables are tender.
  3. Stir in spinach and cook 1 minute.
