Sausage and Pepper Bake Recipe

  • 2 red bell peppers, thinly sliced
  • 2 green bell peppers, thinly sliced
  • 2 medium onions, thinly sliced
  • 4 large garlic cloves, chopped
  • 2 teaspoons dried oregano
  • 1/4 teaspoon dried crushed red pepper
  • 2 tablespoons olive oil
  • 2 pounds sweet Italian sausages
  1. Preheat oven to 350°F. Combine first 6 ingredients in 13 x 9 x 2-inch glass baking dish. Pour oil over and stir to coat. Season with salt and pepper. Brown sausages in heavy large nonstick skillet over high heat, turning often, about 8 minutes. Arrange on pepper mixture.
  2. Bake until sausages are cooked through and peppers are tender, stirring occasionally, about 45 minutes.
