- 2 cups Keebler® Sandies® Simply Shortbread Cookies, crushed
 - 1/4 cup melted butter
 - 3 eggs
 - 1 1/2 cups sugar
 - 3 tablespoons all-purpose flour
 - 1/4 cup lemon juice
 - 1 teaspoon lemon zest, finely chopped
 - 1/3 cup powdered sugar
 
- Preheat oven to 375 degrees. Combine Sandies(R) and melted butter in a mixing bowl. Press into a 9 x 13 inch baking pan. Bake for five minutes, remove from oven and proceed with recipe.
 - Whisk together the remaining ingredients except the powdered sugar in a mixing bowl. Pour over cookie crust and bake for 20-25 minutes or until lightly browned.
 - Let cool and dust with powdered sugar. Cut into 2 inch squares.
