- 2 cups salad greens or arugula
- 1 1/2 cups SARGENTO® Chefstyle Shredded Sharp Cheddar Cheese
- 2 plum tomatoes, diced
- 1 avocado, diced
- 1 cup sprouts (sunflower, pea shoots, adzuki beans or lentil sprouts)
- 2 tablespoons chopped fresh basil or parsley
- 1/2 cup salted, roasted soy nuts (optional)
- 1/3 cup light ranch or Thousand Island dressing
- 4 (6 inch) whole wheat pitas
- Combine salad greens, cheese, tomatoes, avocado, sprouts, basil and soy nuts, if desired, in large bowl. Add dressing; toss well.
- Cut pitas in half; open into pockets and fill with mixture.
