Salmon Casserole Recipe

  • 1 cup low carb pasta
  • 8 ounces canned salmon
  • 1 cup Ranch salad dressing
  • 1/4 teaspoon dill
  • 4 ounces canned mushroom slices
  • 2 scallions, chopped
  • 4 ounces Parmesan cheese
  1. Preheat oven to 350 degrees F.
  2. Cook the low carb pasta in boil water according to the directions on the package except reduce the time by 2 or 3 minutes. Drain well.
  3. Meanwhile, drain and flake the salmon; set aside.
  4. In a large bowl, mix together the ranch dressing, mushrooms, dill and scallions.
  5. When pasta is cooked and drained, add it to the ranch dressing mixture. Mix well. Add the flaked salmon and gently toss until well distributed. Spoon into a butter casserole dish. Top with the Parmesan cheese and bake at 350 degrees F for about 20 minutes.
