- 1 (1 pound) sweet potato, peeled and cubed
- 4 small red or white new potatoes, quartered
- 4 teaspoons extra virgin olive oil
- 2 teaspoons chopped fresh rosemary
- 1/2 teaspoon grated orange peel
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- Preheat the oven to 425 degrees F. Coat a 13 X 9 baking pan with cooking spray.
- Place the sweet potatoes, potatoes, oil, rosemary, orange peel, salt, and pepper in the prepared baking pan. Toss to coat well. Spread the potatoes in a single layer.
- Roast, turning the potatoes several times, for 45 minutes, or until very tender and browned.
