Rosemary-Roasted Potatoes Recipe

  • 1 (1 pound) sweet potato, peeled and cubed
  • 4 small red or white new potatoes, quartered
  • 4 teaspoons extra virgin olive oil
  • 2 teaspoons chopped fresh rosemary
  • 1/2 teaspoon grated orange peel
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  1. Preheat the oven to 425 degrees F. Coat a 13 X 9 baking pan with cooking spray.
  2. Place the sweet potatoes, potatoes, oil, rosemary, orange peel, salt, and pepper in the prepared baking pan. Toss to coat well. Spread the potatoes in a single layer.
  3. Roast, turning the potatoes several times, for 45 minutes, or until very tender and browned.
