- 2 tablespoons white wine vinegar
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground pepper
- 5 tablespoons extra virgin olive oil
- 1 head romaine lettuce, torn
- 6 stalks celery, chopped
- 2 medium Kirby cucumbers, peeled, seeded and sliced
- 3/4 cup torn leaves of mixed herbs such as flat-leaf parsley, chervil, basil, or chives
- 2 ounces grated Pecorino Romano cheese
- Whisk together the vinegar, salt, and pepper in a large salad bowl. Slowly add the oil, whisking constantly.
- Add the romaine, celery, cucumbers, and herbs; toss to coat. Using a vegetable peeler, shave cheese over the top. Add a few more grinds of pepper; toss gently and serve.
