- 2 free-range eggs, beaten
- 150ml/5fl oz whole milk
- 1 tbsp caster sugar
- 2 slices white bread
- 25g/1oz butter
- 2 tbsp maple syrup
- 1 orange, segmented
- 2 tbsp double cream
- icing sugar
- 1 tsp chopped fresh mint
- Beat together the eggs, milk and sugar in a bowl. Dip the slices of bread into the liquid, allowing it to soak in well.
- Heat the butter in a frying pan and fry the egg-soaked bread until golden-brown on both sides, about two minutes per side.
- Heat the maple syrup in a small saucepan and add the orange segments. Warm through for 2-3 minutes.
- Serve the French toast on a serving plate with the oranges and maple syrup spooned over the top. Serve drizzled with cream, dusted with icing sugar and garnished with chopped mint.
